O' So Good Pumpkin Balsamic Streusel Muffins

3/4 cup all purpose flour
1/4 cup brown sugar
2 tablespoons + 2 teaspoons granulated sugar
3 tablespoons salted butter melted
1/4 teaspoon vanilla extract
1/4 tablespoon cinnamon
1 3/4 all purpose flour
1 cup granulated sugar
1/2 cup brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon nutmeg
1 teaspoon pumpkin spice
2 large eggs
1/2 cup O’ So Good Vanilla Olive Oil

3 tablespoons O’ So Good Pumpkin Spice Balsamic Vinegar
2 cups pumpkin puree or pumpkin pie puree
1 teaspoon vanilla extract


Preheat the oven to 375 degrees fahrenheit. Make the streusel by whisking together the dry ingredients. In a separate bowl melt butter until liquid but not hot to the touch and add vanilla extract. Drizzle the butter and vanilla mixture over the dry ingredients and then use a fork to claw in or toss the mixture together until incorporated and clumpy and set aside. In a bowl whisk the dry ingredients for the muffins together and in a separate bowl mix the wet ingredients. Pour the wet mixture into the dry and stir until well mixed. Line a 12 cup muffin tin with liners and distribute batter into each well, about three fourths the way filled and top with streusel. Bake for 20-22 minutes or until a toothpick inserted comes out clean. Enjoy!
