O' So Good Olive Oil's Strawberry Balsamic Cake

Ingredients:

3/4 Cup Granulated Sugar

1/2 Cup Milk

1/2 Cup O’ So Good Olive Oil’s Vanilla Infused Olive Oil

1 Large Egg

1 Teaspoon Vanilla Extract

4 Tablespoons O’ So Good Olive Oil’s Strawberry Balsamic Vinegar

2 Cups All Purpose Flour

1 Teaspoon Baking Powder

1/2 Teaspoon Baking Soda

1/4 Teaspoon Salt

2 Cups Fresh Diced Strawberries

2 Tablespoons Flour

Glaze:

2 Cups Powdered Sugar

1/3 Cup Fresh Diced Strawberries 

1-2 Tablespoons Milk

Directions:

Preheat the oven to 350 degrees Fahrenheit and line the bottom of a baking pan with parchment paper and butter the sides.    (I just ran a stick of cold hard butter around all the sides to grease). Combine the sugar, milk, olive oil, egg, vanilla extract, and balsamic vinegar and whisk together. In a separate bowl combine the flour, baking powder, baking soda, and salt and whisk to combine. Slowly mix the dry ingredients into the wet. Stir 2 tablespoons of flour with diced strawberries and then gently fold into the mixture. Pour into the 9x5 baking (bread) pan and bake for 50-55 minutes or until a knife inserted in the center comes out clean. Allow to cool and set overnight (or 4-5 hours minimum). This is a very important step; the balsamic vinegar and other flavors need to sit and mingle for a while! Then Glaze. **Note for the glaze. I did my glaze in 2 rounds so that it looked extra pretty. Half the recipe and pour the first on and wait 10-15 minutes for the glaze to harden and then do the second layer. Enjoy!
