Lemon Pancakes

Lemon Pancakes

2 cups all purpose flour
3 tbs. Sugar
2 tsp. Baking powder
1 tsp. Baking soda
1/4 tsp. Salt
1 cup milk
1/4 cup yogurt
2 lemons (1 tbs. Lemon zest divided about 1 lemon, and 1/2 cup lemon juice about 2 lemons)
1 tsp. Vanilla extract
1/4 cup O’ So Good Lemon Olive oil + 2 tbs. Divided
1 egg

In a bowl mix the flour, sugar, baking powder, baking soda, and salt. In a separate bowl whisk together the milk, 3/4 of the lemon zest (save some for the topping), yogurt, vanilla, olive oil, and egg. Combine the wet and the dry then add the lemon juice, stirring lightly. Heat a griddle or skillet with 1/2 a tbs. lemon olive oil, use more as needed for cooking pancakes. Cook pancakes in desired shapes and sizes. Top with whip cream and Enjoy!
