Cherry Chocolate Muffins

Cherry Chocolate Muffins

Ingredients:
3 Cups all purpose flour (If you want a healthier muffin use 2 cups whole wheat flour and 1 cup all purpose flour)
2 Tablespoon baking powder
¼ Teaspoon baking soda
½ Teaspoon sea salt
6 Tablespoons O’ So Good Chocolate Olive Oil
¾ Cup cane sugar
2 Large eggs
1 Cup whole or 2% milk
1 Tablespoon O’ So Good Cherry Balsamic Vinegar
¼ Cup greek yogurt
½ Teaspoon vanilla extract
2 Cups fresh cherries pitted and sliced
½ Cup Chocolate Chips

Directions:
Preheat the oven to 400 degrees F. In a measuring cup pour 1 tablespoon of Cherry Balsamic Vinegar and then fill to the top with milk, stir lightly, and then set aside. In a large bowl mix together the dry ingredients, flour, baking powder, soda, and salt, and set aside.
In a separate bowl whisk together the Chocolate Olive Oil, sugar, eggs, milk and vinegar, and greek yogurt. Add the wet to the dry ingredients and combine until there are no lumps. Fold in fresh cherries and chocolate chips. Line a muffin tin with liners and fill each cup just below the top. Sprinkle cane sugar on top and bake for 18-20 minutes or until a toothpick inserted comes out clean. Allow to cool and enjoy!
